#AmericanFoodieTour – the Midwest
Hello! My name is David and I am the Chargé d'Affaires for the U.S. Mission to China. I grew up near Chicago, but like many people who live in the big city, we dreamed of getting away to somewhere cooler when summer came. As a kid, that meant visiting family friends in northern Michigan. I loved it so much as a kid that, when I had a family of my own, we bought a small cabin up there on the shores of Lake Superior, the biggest lake in the world. In the winter, it is cold and snowy – we can get up to 5 meters of snow every year! In the summertime, though, the weather is perfect. Cool in the day, with clear skies and long beautiful sunsets. Maybe the best thing about that part of America – for us, anyway – are the wild berries. When the wild blueberries are ripe, my whole family goes out to gather enough for a summer’s worth of pie, pancakes and jelly. This recipe is from my wife, Mary. Sorry, though. She wouldn’t share her secret recipe for pie crust!
Blueberry Crumble Top Pie
Ingredients
3 pints blueberries (picked yourself, if at all possible)
About ½ cup flour
1 cup and 1 Tablespoon sugar
1 Tablespoon butter, cut into little pieces
1 pie crust
1 cup flour
1/3 cup packed brown sugar
1/3 cup butter
3 Tablespoons chopped nuts (optional)
Toss the blueberries with enough flour to coat them and then toss with the sugar. Put the berries into the pie shell and dot with the butter.
For the crumble top, toss the flour and sugar together. Cut the butter until it forms pea-sized lumps. Stir in the nuts, if you want them in there. This makes a lot of topping for the pie. Use as much as you want and just freeze the rest. If you don’t end up making another pie (my recommendation), you can put the rest on muffins.
Put the topped pie into an oven preheated to 450 degrees (Farenheit) and then immediately turn the oven down to 350 degrees and bake for 45 minutes. Keep an eye on the topping! If it looks like it is going to burn, you can make a little foil tent and cover it.
